Broccoli Soup

Hi Loves!

Let's go green today! So what do you say of a nice broccoli soup for a chilly autumn dinner?



Here it goes ;)

Ingredients for two:

200g Broccoli
1 onion
4-5 potatoes
2TL butter
1l vegetable stock
salt
pepper
chili

To serve with: sour cream and rasped cheese

         
1. Clean and cut the broccoli into pieces.
2. Peal the potatoes and cut the into small cubes.
3. Chop the onion.
4. Heat the butter in a pan and add the onions. Keep until fragrant. Then add the broccoli and potatoes pieces.
5. Add the vegetable stock and kook until the broccoli and the potatoes are soft (approx. 25min)
6. Use your mixer and shuffle until you get a green paste.
7. Take off from the fire. Salt and pepper your soup.
8. My personal secret ingredient is a hint of chili for a sharp taste! ;)

9. Serve in a bowl with sour cream  and rasped cheese!
